Dorset Red is lighter than cheddar with a velvety texture. The amber-coloured core is created by adding the vegetable dye annato (as in Westcombe Red or a Double Gloucester). Plus it's a smoked cheese - so you get the usual gorgeous effect on flavour and a rich red-orange rind.
